Stracciatella (Italian egg soup)
Ingredients
2 cups chicken broth, 2 eggs (beaten), ¼ cup ground almonds, ¼ cup fresh grated cheese (preferably Parmigiano Reggiano), salt and pepper to taste, 2 tbs. Italian flat leaf parsley (chopped)
Method
Heat chicken broth until it comes to a boil. Beat eggs, almonds and cheese together. Pour mixture into the boiling broth and remove pan from heat. Season it with salt and pepper. Leave alone for five minutes and serve garnished with parsley.
Calypso Eggs
Ingredients
4 eggs (beaten), 1 tbs. butter, 1/3 cup red bell pepper (chopped), 2 tbsp green onions (chopped) ½ cup cottage cheese, dash of hot pepper sauce, salt and pepper to taste
Method
Melt butter over medium heat in a pan and add red pepper and green onions to it, sauté for about three to four minutes till they turn tender. Take remaining ingredients in a small bowl and beat together. Add them to the red pepper and green onion mixture and cook further till thick, stirring only occasionally.
